Abstract
Fish is a healthy food, which play an important role in improving the diet, because it is a source of protein, fats, amino acids and other nutrients. At the moment there is a great need for fish products in the global market, so to meet these needs, fishes are grown in artificial ponds. For this reason, it is important to preserve the nutritional value of fish and the prevention of negative consequences on health are of exceptional importance. On the quality and safety of fish products can influence many factors, including the quality of water, natural or artificial food, the environment, etc. Heavy metals, that are in the pool a natural component of water, depending on the geochemical conditions and have a wide ripple, also, have a negative impact on the quality characteristics of fish products. Heavy metals have a deleterious effect on the environment and living organisms including, human health, leading to dysfunction of the gastrointestinal tract, allergies to dysfunction of the nervous system, etc. They may also have an indirect effect, mutagenic, teratogenic, cancer, etc. Heavy metals enter the body of a fish with food, water and bottom sediments. Ararat valley is the most populous district in Armenia, than due to the high technological impact, and Big Al, not subjected to antroponogenic load. The objects selected for the study, are located in different climatic conditions, characterized by their exceptional ecosystem.
