Abstract
The aim of this study is a risk assessment of fresh meat pavilions in tree largest markets in the city of Yerevan by hygienic indicators and micro-bacterial criteria. The obtained research results declare that it is possible to determine the risk level by risk assessment method without analysis. There is a need to implement risk based programs and in meat pavilions additionally implement GHP (Good Hygienic Practice).
